Ingredients

  • 1 lb  Velveeta Monterey jack pepper cheese
  • 1⁄2 cup Heavy cream
  • 1 cup  Milk
  • 3⁄4 cup Pico de gallo
  • 1⁄4 teaspoon  Cayenne pepper
  • 1 tablespoon Parmesan cheese (grated)
  • 5 ounces Frozen creamed spinach (Stouffers)

Instructions

  • Set up a double boiler for gentle, even heating.
  • Cut the cheese into small, manageable cubes.
  • Combine all the ingredients, excluding the spinach, in the double boiler, and heat them until they meld together thoroughly. Stir consistently to ensure a smooth and even mixture.
  • Once the mixture is well melted, remove it from the heat source and introduce the spinach. Stir vigorously to ensure an even distribution.
  • You have two serving options at this point:
  • Serve the dip immediately.
  • For an extra touch, sprinkle a bit more Parmesan on top and place it under the broiler for one to two minutes to achieve a delightful golden finish.
  • Moreover, if you plan to keep it warm for an extended period, consider transferring it to a crockpot set to the "warm" setting.
  • Finally, present the dip alongside tortilla chips and savour the delicious flavours. Enjoy!
