Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1 large apple diced
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/3 cup flour
  • 1/3 cup brown sugar
  • 3 tbsp cold butter
  • 1/2 tsp cinnamon

Instructions
 

  • Preheat oven to 375°F.
  • Line muffin tin with paper liners.
  • Mix flour, baking soda, salt, and spices.
  • Combine pumpkin, oil, eggs, and vanilla.
  • Add wet ingredients to dry ingredients.
  • Fold in diced apples gently.
  • Make streusel by mixing all topping ingredients.
  • Fill muffin cups 2/3 full with batter.
  • Sprinkle streusel on top of each muffin.
  • Bake for 22-25 minutes until golden.
  • Cool in pan for 5 minutes.
  • Transfer to wire rack to cool completely.
