Ingredients
  

  • 1 9-inch Chocolate Cookie Crust
  • 8 Oz Cream Cheese
  • 1 Cup Powdered Sugar
  • 1 Tsp Peppermint Extract
  • 1.5 Cups Heavy Whipping Cream
  • 1/2 Cup Candy Canes Crushed
  • 2 Drops Red Food Coloring

Instructions
 

  • Place your cream cheese in the bowl. Let it sit until it is soft. Beat it until it looks very smooth. There should be no lumps at all.
  • Add the powdered sugar to the bowl. Put in the peppermint extract too. Mix these on a low speed first. This prevents a big sugar cloud.
  • Pour the cold heavy cream into a bowl. Whip it until stiff peaks form. This means the cream stands up straight. Do not over-beat the cream now.
  • Fold the whipped cream into the cheese. Use a slow and gentle motion. This keeps the filling very fluffy. Add the crushed candy canes now.
  • Pour the mix into the chocolate crust. Spread it out with your spatula. Make the top look nice and even. It is almost ready to eat.
  • Put the pie in the fridge. Let it sit for four hours. Overnight is even better for the set. This makes it easy to slice.
