Barefoot Contessa Biscotti Recipe

Ingredients
  

  • 2 cups  All-purpose flour
  • 1 cup  Granulated sugar
  • 3 Eggs
  • ½ tablespoon Baking soda
  • ½ cup  Cooking oil
  • ½ cup  Almonds
  • 3 tablespoon Unsalted butter
  • ½ teaspoon Kosher salt

Instructions
 

  • Preheat the oven to 350 degrees.
  • Blend flour, baking soda, and salt in a bowl. Stir.
  • In another bowl, combine eggs, oil, and sugar. Add almonds.
  • Combine dry mix with wet. Stir until smooth.
  • Lightly grease baking trays with unsalted butter.
  • Place dough on greased trays, and divide into four parts.
  • Shape halves into 12-inch-long logs.
  • Bake dough for 30 minutes, until firm.
  • Allow to cool on a rack.
  • Once cooled, slice logs into cookie shapes.
  • Bake sliced biscotti for 15-20 minutes.
  • Let the biscotti cool to room temperature.

Notes

  • Use the best almonds for yummy flavour.
  • Be patient – bake, cut, and bake again.
  • Add chocolate or citrus zest for extra yum!
