Preheat the oven to 350 degrees.
Blend flour, baking soda, and salt in a bowl. Stir.
In another bowl, combine eggs, oil, and sugar. Add almonds.
Combine dry mix with wet. Stir until smooth.
Lightly grease baking trays with unsalted butter.
Place dough on greased trays, and divide into four parts.
Shape halves into 12-inch-long logs.
Bake dough for 30 minutes, until firm.
Allow to cool on a rack.
Once cooled, slice logs into cookie shapes.
Bake sliced biscotti for 15-20 minutes.
Let the biscotti cool to room temperature.
