Preheat the oven to 180°C. Grease 2 baking trays lightly.
In a big bowl, mix both flour, salt, and ginger.
Melt butter in the microwave or on a hob, to avoid splattering.
Combine melted butter, sugars, and vanilla extract thoroughly.
Beat eggs into the cooled butter mixture.
Blend butter and mix into flour until combined. The dough will be stiff.
Divide dough into 12 pieces. Add chocolate to each.
Shape dough into balls, flatten, and add more chocolate.
Bake for 6-7 mins until slightly golden and soft.
Cool on trays, then transfer to the rack. Enjoy fresh!
Store in an airtight container for up to 3 days.
