Bertucci's Sausage Soup Recipe

Ingredients
  

  • 1 pound  Italian sausage (casings removed)
  • Medium onion (chopped)
  • 3 cloves  Garlic (minced)
  • 1 can Tomatoes (diced) (14.5 oz)
  • 1 can Tomato sauce (8 oz)
  • 4 cups Chicken broth
  • 2 cups  Water
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon  Salt
  • 1/4 teaspoon Black pepper
  • 2 cups  Kale or spinach (chopped)
  • 1 can Cannellini beans (drained and rinsed) (15 oz)  
  • 1/2 cup  Parmesan cheese (grated)

Instructions
 

  • Heat a large pot over medium heat.
  • Cook the sausage, breaking it with a spoon, until browned (5-7 minutes).
  • Add onions and garlic; cook until softened (3-5 minutes).
  • Combine diced tomatoes, tomato sauce, chicken broth, water, basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Add kale or spinach and cannellini beans. Cook for 10 more minutes.
  • Serve in bowls and sprinkle with Parmesan cheese. Enjoy!
