- 1 pound Italian sausage (casings removed)
- 1 Medium onion (chopped)
- 3 cloves Garlic (minced)
- 1 can Tomatoes (diced) (14.5 oz)
- 1 can Tomato sauce (8 oz)
- 4 cups Chicken broth
- 2 cups Water
- 1 teaspoon Dried basil
- 1 teaspoon Dried oregano
- 1 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2 cups Kale or spinach (chopped)
- 1 can Cannellini beans (drained and rinsed) (15 oz)
- 1/2 cup Parmesan cheese (grated)
Heat a large pot over medium heat.
Cook the sausage, breaking it with a spoon, until browned (5-7 minutes).
Add onions and garlic; cook until softened (3-5 minutes).
Combine diced tomatoes, tomato sauce, chicken broth, water, basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
Add kale or spinach and cannellini beans. Cook for 10 more minutes.
Serve in bowls and sprinkle with Parmesan cheese. Enjoy!
