- 2 cans black beans
- 2 cups corn
- 1 red pepper diced
- 1/2 red onion chopped
- 1/4 cup cilantro
- 2 limes juiced
- 3 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper
Wash and drain black beans well.
Cook corn if frozen or use fresh.
Let corn cool down completely first.
Cut red pepper into small pieces.
Chop onion and cilantro very small.
Mix lime juice with olive oil.
Add cumin, salt and pepper together.
Put beans and corn in bowl.
Add pepper and onion to bowl.
Pour dressing over everything in bowl.
Mix all ingredients together gently.
Add cilantro and mix one time.
