Ingredients
  

  • 2 tablespoons Butter
  • Small Onion (diced)
  • 4 Carrots (peeled and diced)
  • Ribs Celery (sliced thin)
  • 2/3 cup Frozen Peas
  • Large can Chicken drained (reserve juices)
  • 2 cups Chicken Broth
  • Salt and freshly ground Black Pepper (to taste)
  • Thyme (to taste)
  • Rosemary (to taste)
  • 1 cup Milk
  • Flour as needed (to thicken)
  • Non-Stick Cooking Spray
  • Egg White beat slightly

Instructions
 

  • Preheat the oven to 425°F.
  • Melt butter in a pot.
  • Cook onion, carrots, and celery until tender.
  • Move veggies to a bowl.
  • Mix in chicken and peas gently.
  • Boil chicken broth in another pot.
  • Season with salt, pepper, and herbs.
  • Pour in milk, and slowly add flour while stirring.
  • Thicken sauce, and adjust thickness to liking.
  • Taste and adjust seasoning if needed.
  • Roll biscuit dough to the desired thickness.
  • Shape dough for pie top and set aside.
  • Grease an oven-safe bowl.
  • Line the bowl with dough, and trim excess.
  • Spoon in chicken mixture.
  • Place pie top, seal edges, and brush with egg.
  • Bake for 30-40 mins till golden.
  • Rest for 5 minutes before serving hot.

Notes

For a crispy crust, lightly brush melted butter before baking. Remember to let it sit a bit before serving!
