Salt and freshly ground Black Pepper (to taste)
Thyme (to taste)
Rosemary (to taste)

Flour as needed (to thicken)
Non-Stick Cooking Spray

Egg White beat slightly
Instructions
Preheat the oven to 425°F.
Melt butter in a pot.
Cook onion, carrots, and celery until tender.
Move veggies to a bowl.
Mix in chicken and peas gently.
Boil chicken broth in another pot.
Season with salt, pepper, and herbs.
Pour in milk, and slowly add flour while stirring.
Thicken sauce, and adjust thickness to liking.
Taste and adjust seasoning if needed.
Roll biscuit dough to the desired thickness.
Shape dough for pie top and set aside.
Grease an oven-safe bowl.
Line the bowl with dough, and trim excess.
Spoon in chicken mixture.
Place pie top, seal edges, and brush with egg.
Bake for 30-40 mins till golden.
Rest for 5 minutes before serving hot.
Notes
For a crispy crust, lightly brush melted butter before baking. Remember to let it sit a bit before serving!
