Ingredients
  

  • 4 cups NAVY BEANS
  • 6 slices THICK CUT BACON
  • 1 medium RED ONION
  • 1 large POBLANO PEPPER
  • 1/2 cup BARBECUE SAUCE
  • 1/4 cup MOLASSES
  • 2 tbsp BROWN SUGAR
  • 1 tbsp DIJON MUSTARD
  • 1 tbsp CIDER VINEGAR
  • 1 cup CHICKEN STOCK

Instructions
 

  • Cook the Bacon: Start by frying the bacon in the pot. Cook it until it is very crispy. Remove the bacon but keep the fat.
  • Sauté the Veggies: Add the onions and peppers to the fat. Cook them until they are soft and clear. This takes about five minutes.
  • Mix the Sauce: Stir in the molasses, sugar, and mustard. Add the BBQ sauce and the vinegar now. Mix it until the sugar melts completely.
  • Add the Beans: Pour the beans and stock into the pot. Stir well to coat every bean in sauce. Crumble the crispy bacon back into the mix.
  • Bake the Dish: Put the pot into a hot oven. Let it bake uncovered for about one hour. The sauce will get thick and bubbly.
