Cutting board
- 4 cups NAVY BEANS
- 6 slices THICK CUT BACON
- 1 medium RED ONION
- 1 large POBLANO PEPPER
- 1/2 cup BARBECUE SAUCE
- 1/4 cup MOLASSES
- 2 tbsp BROWN SUGAR
- 1 tbsp DIJON MUSTARD
- 1 tbsp CIDER VINEGAR
- 1 cup CHICKEN STOCK
Cook the Bacon: Start by frying the bacon in the pot. Cook it until it is very crispy. Remove the bacon but keep the fat.
Sauté the Veggies: Add the onions and peppers to the fat. Cook them until they are soft and clear. This takes about five minutes.
Mix the Sauce: Stir in the molasses, sugar, and mustard. Add the BBQ sauce and the vinegar now. Mix it until the sugar melts completely.
Add the Beans: Pour the beans and stock into the pot. Stir well to coat every bean in sauce. Crumble the crispy bacon back into the mix.
Bake the Dish: Put the pot into a hot oven. Let it bake uncovered for about one hour. The sauce will get thick and bubbly.
➔ Use high-quality bacon for the best smoky flavor.
➔ Do not drain the beans too much before adding.
➔ Stir the beans halfway through the baking time.
➔ Add a splash of water if they look dry.
➔ Let the beans sit for ten minutes before serving.
➔ Use a spicy BBQ sauce for more heat.
