Ingredients
  

  • Chicken breasts (boneless and skinless)
  • 1/2 tsp Onion powder
  • 1/2 tsp Black pepper
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic powder
  • 2 tbsp Olive oil
  • Salt and black pepper to taste
  • 1/4 cup  Black olives (sliced)
  • 1 cup Sour cream
  • 1/2 cup  Mayonnaise
  • 1/2 cup Cheddar cheese (grated)
  • 1/2 cup Monterey Jack cheese (grated)
  • 1/4 cup Green chilies (diced)
  • 1/4 tsp Cayenne pepper
  • 2 tbsp Fresh cilantro (chopped)
  • 1 tsp Ground cumin
  • 1/2 tsp Chili powder
  • Fresh cilantro leaves
  • Sliced green onions
  • 1 teaspoon  Salt

Instructions
 

  • Preheat the oven to 375°F. Season chicken with salt, pepper, paprika, garlic, and onion powder.
  • Heat oil in a skillet. Sear chicken until golden, 2-3 mins each side. Set aside.
  • Combine sour cream, mayo, cheddar, Monterey Jack, olives, chilies, cilantro, cumin, chili powder, cayenne, salt, and pepper. Mix well.
  • Place chicken back in the skillet. Pour Monterey Sauce evenly. Bake for 25-30 mins until chicken is cooked and sauce bubbles.
  • Remove from the oven, garnish with cilantro and green onions. Serve hot.

Notes

  • Choose premium cheddar and Monterey Jack for rich, melty goodness.
  • Cook at 375°F for 25-30 mins for perfectly cooked and golden chicken.
