Ingredients
  

For The Meringue

  • Egg whites
  • 1 teaspoon Cream of tartar
  • ½ cup  Sugar

For The Filling

  • Egg yolks
  • 1 can  Condense milk
  • 1 cup  Milk
  • 2 tablespoon Cornstarch
  • 1 teaspoon Vanilla
  • lemon zest

Instructions
 

For The Meringue:

  • Preheat the oven to 325°F and prepare the muffin pan with muffin cups.
  • In a standing mixer with a whisk attachment, whisk the egg whites on high speed until bubbles start to appear.
  • Add the cream of tartar as the mixture foams, gradually incorporating the sugar until soft peaks form, resulting in a smooth and glossy texture.
  • Transfer the whipped egg whites into a piping bag fitted with a 1 M tip.
  • Pipe the meringue into the prepared muffin cups.
  • Bake for 35-40 minutes or until the meringue turns golden brown.
  • After baking, leave the oven doors open, allowing the meringue to cool inside to prevent deflation.

For The Filling:

  • In a saucepan, combine the cornstarch and milk, whisking them together.
  • Add the egg yolks, condensed milk, vanilla, and lemon zest to the mixture, stirring until well combined.
  • Place the saucepan on the stove over medium heat and stir continuously for 30 to 40 minutes until the mixture thickens.
  • Once the custard reaches the desired consistency, remove the saucepan from the heat and let it cool.
  • Once cooled, transfer the custard into a piping bag fitted with a 1M tip.
  • Pipe the custard into the center of each meringue cup.
  • Serve the Brazo De Mercedes Cupcakes immediately for the ultimate enjoyment.
