Ingredients
  

  • 12 egg roll wrappers
  • 2 cups cooked chicken shredded
  • 8 oz cream cheese softened
  • 1/2 cup buffalo sauce
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup green onions chopped
  • Oil for frying
  • 1 egg beaten for sealing

Instructions
 

  • Mix cream cheese until smooth and creamy.
  • Add buffalo sauce to cream cheese mixture.
  • Stir in shredded chicken and cheddar cheese.
  • Add chopped green onions to mixture.
  • Place wrapper on clean work surface.
  • Add 2 tablespoons filling to center.
  • Fold bottom corner over the filling.
  • Fold side corners toward the center.
  • Roll tightly and seal with beaten egg.
  • Heat oil to 350°F in deep fryer.
  • Fry egg rolls for 3-4 minutes.
  • Remove when golden brown and crispy.

Notes

  1. Keep egg roll wrappers covered with damp towel
  2. Don't overfill rolls or they'll burst open
  3. Seal edges completely to prevent oil leakage
  4. Fry in small batches for even cooking
  5. Drain on paper towels immediately after frying
