- 1 Egg yolk
- 1 tbsp Vinegar
- 1 tsp Rubbed Sugar
- 1 tsp Heaped Mustard, (medium hot)
- 125 ml Sunflower oil
- 50 g Tomato ketchup
- 30 g Onion (pureed)
- 15 g Gherkins
- 1 tbsp Heaped Parsley, (finely chopped)
- 1 tsp Rubbed Salt
- 2 Teaspoons Lemon juice
- 1 Garlic (optional)
Mix egg yolks, vinegar, mustard, and sugar briefly.
Slowly add oil, starting with a few drops.
Gradually increase oil after 20 ml.
Don't rush adding oil to avoid separation.
Aim for a firm mayo consistency.
Blend ketchup, onion, gherkin, lemon, parsley.
Mix this with the mayo.
Perfect for burgers; enjoy 5-6 larger ones!
Makes about 270-300 ml of delicious sauce.
