Ingredients
  

  • 1 pound  Smoked sausage (sliced)
  • 1 pound Chicken breasts (diced)
  • Onion (chopped)
  • Green bell pepper (chopped)
  • Red bell pepper (chopped)
  • 3 cloves  Garlic (minced)
  • 1 can  Tomatoes (diced and undrained)
  • 2 cups  Chicken broth
  • 1 teaspoon  Cajun seasoning
  • 1/2 teaspoon  Thyme (dried)
  • 1/2 teaspoon  Basil (dried)
  • 1/2 teaspoon  Oregano (dried)
  • 1/4 teaspoon  Cayenne pepper
  • 1 pound  Linguine or fettuccine pasta
  • 1/2 cup Parmesan cheese (grated)  
  • Chopped parsley (for garnish)

Instructions
 

  • Heat vegetable oil in a large skillet over medium heat.
  • Sauté onion and garlic until fragrant and translucent.
  • Add ground beef, cook until browned, and drain excess grease.
  • Sprinkle chili powder, paprika, cumin, salt, and pepper over beef.
  • Stir well, and let spices cook briefly for flavour.
  • Adjust seasonings to your taste.
  • Warm taco shells as per package instructions.
  • Spoon seasoned beef into taco shells.
  • Top with lettuce, tomatoes, cheese, olives, jalapeños, and sour cream.
  • Serve Jimboy's Tacos immediately while warm.
  • Enjoy as-is or with Mexican sides like rice, beans, or guacamole.
