Ingredients
  

  • 6 large russet potatoes diced
  • 1 large onion chopped
  • 3 celery stalks diced
  • 1 bell pepper chopped
  • 4 garlic cloves minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Green onions for garnish

Instructions
 

  • Heat oil in large pot over medium heat.
  • Add onion, celery, and bell pepper. Cook 5 minutes.
  • Add garlic and cook 1 more minute.
  • Add diced potatoes and chicken broth.
  • Bring mixture to a rolling boil.
  • Add Cajun seasoning and paprika.
  • Reduce heat and simmer 20 minutes.
  • Potatoes should be fork-tender when done.
  • Stir in heavy cream gradually.
  • Season with salt and pepper.
  • Simmer 5 more minutes until thickened.
  • Garnish with chopped green onions before serving.
