- 2 cups Cooked chicken breasts (diced)
- 2 cups Broccoli florets, (blanched and chopped)
- 2 cups Cooked pasta (rotini or penne)
- 1/2 cup Red bell pepper (diced)
- 1/2 cup Red onion (finely chopped)
- 1/2 cup Mayonnaise
- 1/4 cup Greek yogurt
- 2 tablespoons Lemon juice
- 1 tablespoon Dijon mustard
- 1 Clove garlic (minced)
- Salt and pepper (to taste)
- 1/4 cup Fresh parsley (chopped)
- 1/4 cup Grated Parmesan cheese
Mix chicken, broccoli, pasta, peppers, and onion in a big bowl.
In another bowl, mix mayo, yoghurt, lemon, mustard, garlic, salt, and pepper.
Pour dressing on salad, and toss well. Chill for 1 hour.
Add parsley, and Parmesan before serving.
