Heat olive oil in a large skillet over medium-high heat.
Add garlic, onion, and bell pepper; sauté for 3-4 minutes until softened.
Cook shrimp for 2-3 minutes per side until pink; set aside.
In the same skillet, add cherry tomatoes; cook for 2 minutes.
Optionally, add white wine; simmer for a minute to reduce.
Combine chicken broth, smoked paprika, cayenne, salt, and pepper; simmer for 5 minutes.
Return shrimp to the skillet, and heat through in the sauce.
Serve Camptown shrimp over rice, pasta, or with crusty bread.
Garnish with fresh parsley for colour and flavour.
