- 1 tablespoon Olive Oil
- 1 Medium-sized Onion (Chopped)
- 1 Head Garlic Roasted
- 1 tablespoon Pineapple (Crushed)
- 1 ½ cup Domino Dark Brown Sugar
- ¼ cup Jack Daniels Whiskey
- 1 ¼ cup Dole Pineapple Juice
- 1 tablespoon Soy Sauce
- ¼ cup Kikkoman Teriyaki Sauce
- 3 tablespoon Lemon Juice
- 3 tablespoon Bragg Apple Cider Vinegar
- 1 teaspoon Red Wine Vinegar
- ⅛ teaspoon Cayenne Pepper
For The Roast Garlic Head:
Preheat the oven to 400 °F (200 °C).
Halve garlic head; place on foil.
Drizzle, brush with oil; wrap loosely in foil.
Roast for 30–35 minutes; then set aside.
For The Bourbon Glaze:
Heat 1 tbsp oil in a saucepan over medium heat.
Sauté onion until soft.
Then, add roasted garlic, crushed pineapple, brown sugar, Jack Daniel's Whiskey, pineapple juice, Teriyaki sauce, soy sauce, lemon juice, apple cider vinegar, red wine vinegar, and cayenne pepper.
Boil, then simmer on low heat for 12–15 minutes; reduce by half.
Remove from heat, let thicken; then pour into a glass jar.
