Wash your fresh cherries under cold water. Use your pitter to remove every single pit. Chop the cherries into very small pieces.
Place the cherries in a small pot. Add a little sugar and lemon juice. Cook them on low heat for ten minutes.
Let the cooked cherries cool down completely. Set them aside in a small bowl. This creates a sweet cherry syrup.
Whisk the egg yolks and sugar together. Do this in a medium mixing bowl. The mixture should look pale and thick.
Heat the milk in your large saucepan. Bring it to a very gentle simmer. Do not let the milk boil over.
Slowly pour hot milk into the eggs. Whisk quickly so the eggs do not cook. This step is called tempering the eggs.
Pour everything back into the large saucepan. Stir constantly over a very low heat. The liquid will soon thicken like gravy.
Strain the custard into a clean bowl. Stir in the heavy cream and vanilla. Chill this mixture in the fridge for hours.
Pour the cold base into your machine. Turn the machine on to start churning. Follow the manufacturer's directions for your model.
Add the cherries during the last five minutes. Let the machine mix them in evenly. The ice cream will look very pretty.
Spread the soft ice cream into a container. Press plastic wrap directly onto the surface. Freeze it until it is very firm.
