Ingredients

  • 1 lb Pork or beef (cut into thin slices)
  • 12 Corn tortillas
  • 2 tbsp Vegetable oil
  • 1 tsp Cumin, ground
  • 4 Garlic cloves, minced (2,2 cloves separated)
  • ½ cup Tomatoes, diced
  • 1 tsp Dried oregano
  • 2 tbsp Lime juice
  • ¼ cup Cilantro, chopped
  • ½ cup Onion , diced
  • 2 Jalapeno peppers, diced
  • Salt (to taste)
  • Black pepper (to taste)
  • ¼ cup Chopped onions (to garnish)
  • ¼ cup Chopped cilantro (to garnish)

Instructions

  • Take a small bowl and add salt, black pepper, cumin, and 2 cloves of minced garlic, and oregano in it. Mix them well.
  • Add the thin slices of the meat to this mixture and toss them to coat with this mixture. Cover the bowl and place in the refrigerator for marination for half an hour.
  • Then take a large skillet and add the vegetable oil to it. Heat it on a medium-high flame.
  • Saute the onions in this oil until they are soft, for about 3 minutes.
  • Then add the remaining 2 cloves of minced garlic, jalapeno peppers, and tomatoes and saute them for 4 minutes.
  • When the vegetables are soft, add cilantro. Mix everything well.
  • Take out the marinated meat from the refrigerator and add the slices to the skillet.
  • Cook until the meat is browned. It will take another 4-5 minutes. Cook both sides of the meat slices.
  • In a dry skillet, warm the corn tortillas for one minute each tortilla, flipping its side after 30 seconds.
  • On the serving plate, place the heated tortilla and add a spoonful of the cooked meat mixture to it. Then garnish with chopped cilantro and onions.
  • Repeat with the remaining items. Your toothsome Chilindrina is ready. Serve it with Mexican rice. Bon Appetit!
