Ingredients
  

  • 5 large Eggs
  • 3 cups All-purpose flour
  • 1 cup Shortening
  • 1 cup Sugar
  • 1-1/2 cups Whole red candied cherries
  • 3 cups Candied pineapple (diced)
  • 1-1/2 cups Whole green candied cherries
  • 1 lb Walnut halves
  • 10 oz Golden raisins
  • 3 tsp Baking powder
  • 4 tbsp Vanilla extract
  • 1 tsp Salt

Instructions
 

  • Preheat the oven to 300°. Combine fruits and nuts. In a separate bowl, mix shortening and sugar. 
  • Stir in eggs and vanilla extract.
  • Combine flour, baking powder, and salt. Add to the creamed mixture. 
  • Pour over fruits and nuts, and mix well. Place in a greased 10-inch tube pan.
  • Bake for about two hours or until a toothpick comes out clean. 
  • Cool for 10 minutes. Transfer to a wire rack to cool completely. Bring to room temperature before cutting.

Notes

  • Add Cream: A bit of whipped cream makes each bite creamy and delightful.
  • Thin Slices: Cut thin slices to enjoy all the flavours in every bite.
