- 5 large Eggs
- 3 cups All-purpose flour
- 1 cup Shortening
- 1 cup Sugar
- 1-1/2 cups Whole red candied cherries
- 3 cups Candied pineapple (diced)
- 1-1/2 cups Whole green candied cherries
- 1 lb Walnut halves
- 10 oz Golden raisins
- 3 tsp Baking powder
- 4 tbsp Vanilla extract
- 1 tsp Salt
Preheat the oven to 300°. Combine fruits and nuts. In a separate bowl, mix shortening and sugar.
Stir in eggs and vanilla extract.
Combine flour, baking powder, and salt. Add to the creamed mixture.
Pour over fruits and nuts, and mix well. Place in a greased 10-inch tube pan.
Bake for about two hours or until a toothpick comes out clean.
Cool for 10 minutes. Transfer to a wire rack to cool completely. Bring to room temperature before cutting.
