Ingredients
  

  • Costco Veggie Burgers
  • 2 (9 grain) OraWheat Sandwich Thins
  • Cucumber  (thinly sliced)
  • 4 Onion (thinly sliced)
  • 1/2 cup Pine nuts
  • 2 tablespoons  Parmesan cheese
  • 12 spears  Fresh asparagus
  • 1/2 Tomato (thinly sliced)
  • 2 tablespoons  Extra virgin olive oil
  • 2 slices Dofino Havarti deli sliced cheese or jack cheese

Instructions
 

  • Warm a 9-inch skillet, add 1 tbsp olive oil over gentle heat.
  • Set 2 Costco veggie patties, surround them with asparagus, and drizzle olive oil. Add pine nuts to an open spot in the skillet.
  • Toast sandwich thins in halves on a high toaster setting.
  • Stir pine nuts and asparagus for even cooking while patties brown.
  • After 3-4 mins, flip the patties, and stir pine nuts, and asparagus for 3-4 mins.
  • Top toasted thins with cheese slices. Layer: Veggie burger, tomato, cucumber, onion, Parmesan. Add salt and pepper.
  • Garnish plate edges generously with asparagus and pine nuts.

Notes

  • To make a simple meal, cook your Costco Veggie Burger just right.
