In a large cast iron frying pan, heat oil and butter.
Add potatoes and cook with the lid on, stirring occasionally.
Cook until potatoes turn golden brown, about 30-45 minutes.
Remove the lid for the last 10 minutes of cooking.
Add fresh garlic, cook for about 5 minutes until soft.
Season with salt, pepper, granulated garlic, paprika, or cayenne pepper.
Serve on an attractive platter or plate.
Sprinkle freshly chopped parsley on top.
Serve hot with bacon, eggs, cold meats, salads, and sandwiches.
