For Steak:
- 4 cube steaks
- 2 cups buttermilk
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- Oil for frying
For Gravy:
- 3 tablespoons pan oil
- 3 tablespoons flour
- 2 cups milk
- Salt and pepper
Soak steaks in buttermilk for 30 minutes.
Mix flour with salt and pepper.
Heat oil to 350 degrees.
Coat each steak in flour mix.
Dip back into buttermilk.
Coat with flour mix again.
Fry steaks 3-4 minutes each side.
Put on wire rack to drain.
Keep warm in oven.
Save 3 tablespoons of pan oil.
Add flour to oil and mix.
Cook flour mix for 2 minutes.
Add milk slowly while mixing.
Add salt and pepper to gravy.
Serve steaks with hot gravy.
