Ingredients
  

  • 2 pounds beef chuck roast cubed
  • 4 medium potatoes diced
  • 3 large carrots sliced
  • 1 large onion chopped
  • 3 celery stalks chopped
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves

Instructions
 

  • Cut beef into small cubes.
  • Dice potatoes into bite-sized pieces.
  • Slice carrots into rounds.
  • Chop onion and celery.
  • Add beef to crockpot first.
  • Layer vegetables over beef.
  • Mix broth with tomato paste.
  • Pour mixture over ingredients.
  • Add salt, pepper, and thyme.
  • Drop in bay leaves.
  • Cook on low 8 hours.
  • Remove bay leaves before serving

Notes

  1. Brown beef first for deeper flavor
  2. Cut vegetables uniformly for even cooking
