Ingredients
  

  • 2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar.
  • 24 oz cream cheese softened
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup cocoa powder
  • 2 cups fresh or canned cherries
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • whipped cream for decoration.

Instructions
 

  • Mix cookie crumbs, melted butter, and sugar together.
  • Press mixture firmly into your springform pan bottom.
  • Refrigerate for 15 minutes while you prepare filling.
  • Beat cream cheese until smooth and creamy first.
  • Add sugar and mix until well combined completely.
  • Add eggs one at a time, mixing gently.
  • Mix in vanilla, sour cream, and cocoa powder.
  • Pour this mixture over your chilled crust carefully.
  • Preheat your oven to 325°F before starting.
  • Bake cheesecake for 50-55 minutes until center jiggles.
  • Turn off oven and leave cheesecake inside.
  • Let it cool slowly for one full hour.
  • This prevents ugly cracks on top!
  • Cook cherries, sugar, and cornstarch in a saucepan.
  • Stir constantly until mixture thickens nicely and bubbles.
