Ingredients
  

  • 1/2 cup  Cornstarch
  • 1/2 cup  All-purpose flour
  • 1 1/2 teaspoon  Baking powder
  • 3/4 teaspoon  Salt
  • 1 dash  Sugar
  • 1/2 cup Milk (Cold)
  • 1/3 cup  Water (Cold)

Instructions
 

  • Combine cornstarch, flour, baking powder, salt, and sugar in a bowl.
  • In a separate bowl, mix milk and water together.
  • Gradually blend the milk mixture into the dry ingredients until smooth.
  • Optionally, include desired seasonings.
  • Coat the food (shrimp, veggies, fish) with the batter, and let the excess drip.
  • Fry in hot oil until golden brown.

Notes

  • Use cold ingredients: Cold food helps the batter stick better.
  • Make food dry: Wet food makes the batter soggy.
  • Heat the oil: Make sure it's hot enough.
