Equipment

  • Baking pan
  • Large mixing bowl
  • Electric hand mixer
  • Measuring cups
  • Rubber spatula
  • Non-stick cooking spray.
  • Cooling rack

Ingredients

  • 1 box YELLOW CAKE MIX
  • 1/2 cup MELTED BUTTER
  • 3 large EGGS
  • 8 oz CREAM CHEESE
  • 4 cups POWDERED SUGAR
  • 1 tsp VANILLA EXTRACT

Instructions

Step 1:

  • Preheat your oven to 350 degrees Fahrenheit now. Grease your baking pan with non-stick spray. This prevents the dough from sticking.

Step 2:

  • Dump the cake mix into a large bowl. Add the melted butter to the mix. Add one large egg to the bowl.

Step 3:

  • Stir the mixture with a large spoon. A thick and soft dough will form soon. Make sure all the flour is wet.

Step 4:

  • Press the dough into the greased pan. Use your fingers to push it down. Make the crust level across the bottom.

Step 5:

  • Place the cream cheese in a separate bowl. Beat it with your mixer until smooth. This should take about two minutes.

Step 6:

  • Add the remaining two eggs to the cheese. Pour in the vanilla extract as well. Mix them together on a low speed.

Step 7:

  • Add the powdered sugar to the bowl slowly. Mix until the batter is very creamy. Stop when you see no more lumps.

Step 8:

  • Pour the liquid over the cake crust. Use a spatula to spread it out. Cover every corner of the bottom crust.

Step 9:

  • Place the pan in the hot oven. Bake the bars for 40 minutes total. The center should still jiggle slightly.

Step 10:

  • Remove the pan from the oven carefully. Let the bars cool for two hours. They need time to set and firm.

Notes

Use room temperature cream cheese for a smooth mix. Cold cheese will leave small lumps behind.
Do not overbake the bars to keep them gooey. The center should stay a bit soft.
Sift your powdered sugar before you start mixing. This prevents air bubbles in your topping.
Use a plastic knife to cut clean squares. It slides through the gooey layer easily.
Grease the pan very well before adding dough. This makes serving the bars much easier.
Let the bars cool completely before you slice. This creates very sharp and pretty edges.
