- 1 Can Whole Peeled Plum Tomatoes (28-ounce)
- 1 teaspoon Distilled White Vinegar
- ½ Medium White Onion (Minced)
- 3 Cloves Garlic (Minced)
- 1 Jalapeno Pepper (Minced)
- 1 teaspoon Kosher Salt
- 2 teaspoon Vegetable Oil
- 1 teaspoon Ground Cumin
- 1 teaspoon White Sugar
Combine finely chopped onion, garlic, and jalapenos in a small bowl.
Heat oil in a medium saucepan.
Add minced garlic, onion, and jalapeno to the pan.
Stir in salt and cumin; cook until veggies are tender.
Add white vinegar, sugar, and chopped Roma tomatoes.
Dissolve sugar by stirring all ingredients.
Let the salsa cool after removing it from the heat.
Cover with plastic wrap or lid, and place in a glass jar or bowl.
Refrigerate the homemade El Fenix Salsa before serving.
