Ingredients
  

  • 2 cups glutinous rice washed and drained
  • 1 can 400ml coconut milk
  • 1 cup brown sugar
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil

Instructions
 

  • Soak glutinous rice for 2 hours.
  • Drain rice completely using fine strainer.
  • Boil water and coconut milk together.
  • Add soaked rice to boiling mixture.
  • Stir constantly for 15 minutes.
  • Rice should absorb most liquid.
  • Add brown sugar and salt.
  • Continue stirring for 20 minutes.
  • Mixture becomes thick and sticky.
  • Grease baking dish with coconut oil.
  • Pour mixture into prepared dish.
  • Smooth surface with wet spoon.
  • Let cool for 30 minutes.
  • Cut into squares before serving.
