For the pineapple rings:
- 1 fresh pineapple cut into rings
- 1 cup flour
- ½ cup cornstarch
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 cup cold soda water
- Oil for frying
For the coconut dipping sauce:
- ½ cup coconut milk
- ¼ cup sweetened condensed milk
- 1 tablespoon shredded coconut
- 1 teaspoon vanilla
- A small pinch of salt
Remove the skin. Cut it into round slices.
In a bowl, mix flour, cornstarch, sugar, and baking powder.
Mix until smooth. The batter should be thick.
Heat oil in a pan to 350°F (175°C).
Dip pineapple in batter.
Coat each slice well.
Fry 2–3 rings at a time until golden brown.
Drain the rings.
Place them on paper towels or a cooling rack.
Make the coconut dipping sauce.
Mix coconut milk, condensed milk, vanilla, coconut, and salt.
