Ingredients
  

  • 1 lb MUSHROOMS
  • 3 tbsp BUTTER
  • 1 tbsp OLIVE OIL
  • 4 cloves GARLIC
  • 1/2 tsp SALT
  • 1/4 tsp BLACK PEPPER
  • 1 tbsp PARSLEY
  • 1 tsp LEMON JUICE

Instructions
 

Step 1:

  • Grab your fresh mushrooms from the fridge. Use a damp paper towel for cleaning.

Wipe away all the dark dirt carefully. Do not put them in water.

  • Mushrooms soak up water like a sponge. This makes them very soft.

Step 2:

  • Place the mushrooms on your cutting board. Use a sharp knife for the slicing.

Cut them into thick, even slices now. Keeping them thick helps the texture.

  • They will shrink when they get hot. Even slices help them cook together.

Step 3:

  • Put your large skillet on the burner. Turn the stove to medium-high heat.
  • Let the pan sit for a minute. It needs to be very hot first.
  • A hot pan makes the best mushrooms. This creates a great sear.

Step 4:

  • Pour the olive oil into the pan. Add the butter to the oil.
  • The oil stops the butter from burning. Watch for the butter to bubble.
  • It will start to smell very nutty. This is a good sign.

Step 5:

  • Carefully add the mushrooms to the skillet. Try to make a single layer.
  • Do not pile them up too high. If the pan is full, use two.
  • Crowded mushrooms will steam instead of fry. This ruins the texture.

Step 6:

  • Let the mushrooms sit for two minutes. Do not stir them quite yet.
  • You want a nice brown crust. This crust has all the flavor.
  • Wait for the edges to turn gold. Be very patient during this step.

Step 7:

  • Now you can stir the mushrooms gently. Use your wooden spoon for this.
  • Cook them for five more minutes. They will release their natural juices.
  • The juices will then cook away. The mushrooms will become glossy.

Step 8:

  • Peel and mince your fresh garlic cloves. Add the garlic to the skillet.
  • Stir the garlic into the mushrooms quickly. Cook it for only one minute.
  • Burnt garlic tastes very bitter. Keep the garlic moving.

Step 9:

  • Sprinkle the sea salt over the top. Add the black pepper for spice.
  • Squeeze the fresh lemon juice in now. This adds a very bright finish.
  • Stir everything one last time together. The smell will be amazing.

Step 10:

  • Take the skillet off the hot burner. Chop the fresh parsley very finely.
  • Sprinkle the parsley over the mushrooms. Serve them while they are steaming.
  • They taste best right from the pan. Enjoy your healthy meal.

Use a very hot pan for browning.
Do not wash mushrooms with much water.
Add the garlic at the very end.
Use fresh garlic for the best smell.
