Ingredients
  

  • 3 tablespoons Butter or dairy-free butter
  • 3 tablespoons Gluten-free all-purpose flour
  • ½ teaspoon Yellow mustard
  • ¼ teaspoon Salt
  • Large pinch of black pepper
  • 12 oz Gluten-free elbow macaroni
  • 3 cups Sharp Cheddar cheese (shredded divided)

Instructions
 

  • Combine breadcrumbs and melted butter, and set aside for later use.
  • Preheat the oven, butter the baking pan, and set aside.
  • Boil water, heavily salt it, and cook pasta until al dente.
  • Melt butter, and stir in flour until smooth in a saucepan.
  • Gradually whisk in hot milk until smooth and thick.
  • Season with mustard, salt, and pepper in the sauce.
  • Add cheese and cooked pasta to the sauce, and mix.
  • Transfer mixture to baking dish, and sprinkle with cheese and breadcrumbs.
  • Bake until browned and bubbly, about 15-20 mins.

Notes

  • Cook the macaroni until it's just right, not too soft or too hard.
  • Stir lots when adding the cheese for a smooth texture.
