Gino's Chicago Deep Dish Pizza Recipe

Ingredients
  

  • 1 cup  Warm water
  • 1 package  Yeast (1/4 ounce)
  • 3⁄4 cup  Cornmeal
  • 1 teaspoon  Salt
  • 1 teaspoon  Sugar
  • 1⁄4 cup  Olive oil
  • 2 tablespoons  Butter (melted)
  • 2 1⁄2 cups Flour

Instructions
 

  • Preheat the oven to 475°F. Use a 12" round deep dish seasoned skillet.
  • Grind 3/4 cup cornmeal finely. Sift into a mixer bowl.
  • Combine cornmeal, warm water, yeast, salt, sugar, olive oil, and melted butter. Mix for 10 minutes.
  • Add 1 cup flour, then gradually add remaining until kneadable.
  • Knead dough on a floured surface for 3-5 minutes.
  • Oil mixer bowl. Place dough in, cover, and let rise (1/2 - 1 1/2 hours).
  • Punch down dough. Roll into a 1/4-inch thick circle.
  • Oil skillet with canola oil. Place dough, and form crust.
  • Cover dough, let rise until oven preheats to 475°F.
  • Brush the crust with melted butter.
  • Layer cheese (1/2 - 3/4 inches), then meat, then sauce.
  • Sprinkle parmesan cheese on top.
  • Bake at 475°F for 15 minutes.
  • Lower to 400°F, and bake for 10-25 minutes until golden brown.
  • Cool for 5 minutes, then serve. Enjoy your pizza!

Notes

  • Don't forget to put butter on the crust – it makes it golden and delicious.
  • Start with cheese, then toppings, then sauce for the best taste.
  • Let it cool a little before you cut it so the toppings stay in place.
