Gordon Ramsay Christmas Pudding Recipe

Equipment

  • Large mixing bowl
  • Wooden spoon for stirring
  • Pudding basin (1.2 liter)
  • Baking parchment and foil
  • String for tying
  • Large pot for steaming
  • Grater for citrus zest

Ingredients
  

  • 150 g raisins
  • 150 g sultanas
  • 100 g currants
  • 50 g mixed candied peel
  • 100 g dark brown sugar
  • 100 g butter softened
  • 2 large eggs
  • 100 g plain flour
  • 1 teaspoon mixed spice
  • Orange and lemon zest
  • 100 ml brandy
  • 50 g breadcrumbs
  • Pinch of salt

Instructions
 

  • Put all dried fruits in a bowl.
  • Pour brandy over them completely.
  • Cover and leave overnight to soak.
  • This makes fruits juicy and flavorful.
  • Beat butter and sugar until light.
  • Add eggs one at a time slowly.
  • Mix in flour and spices gently.
  • Add soaked fruits with any liquid left.
  • Stir in breadcrumbs and citrus zest.
  • Mix everything together really well.
  • The mixture should be thick and sticky.
  • Add a pinch of salt now.
  • Grease your pudding basin with butter.
  • Pour mixture into the basin completely.
  • Leave one inch space at top.
  • Smooth the surface with a spoon.
  • Place parchment on top of mixture.
  • Cover with foil and tie tightly.
  • Make sure no water gets inside.
  • Create a handle with string for lifting.
  • Place basin in a large pot.
  • Add boiling water halfway up the basin.
  • Steam for 6 hours on low heat.
  • Keep checking and add more water regularly.
  • Let it cool down after steaming.
  • Store in a cool, dark place.
  • On Christmas Day, steam for 2 hours.
  • Serve warm with brandy butter or cream.

  • Soak fruits overnight for maximum flavor.
  • Use good quality brandy for best results.
  • Don't skip the long steaming time.
