Ingredients
  

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small shallot finely chopped
  • 2 tbsp crushed peppercorns black or mixed
  • 1/2 cup beef stock
  • 1/2 cup heavy cream
  • 1/4 cup brandy or cognac
  • Salt to taste

Instructions
 

Heat the pan

  • Place a small pan on medium heat. Add butter and oil. Let it melt.

Cook shallots

  • Add finely chopped shallots. Cook until soft and light brown.

Add peppercorns

  • Add crushed peppercorns. Stir well. Let the flavor release.

Add brandy

  • Pour brandy slowly. Let it bubble for one minute. Alcohol cooks away.

Add stock and cream

  • Add beef stock and heavy cream. Stir until smooth.

Simmer gently

  • Cook on low heat for 4-5 minutes. Sauce becomes thick and creamy.

Season

  • Add a pinch of salt. Mix well. Taste and adjust seasoning.

Notes

  • Crush peppercorns fresh for strong flavor.
  • Simmer slowly. Do not rush.
  • Use good beef stock for rich taste.
  • Add more cream if sauce is too strong.
