Ingredients
  

For The Pastry:

  • 4 cups  Flour
  • ¼ teaspoon Salt
  • 1 tablespoon Sugar
  • 1 ½ sticks  Butter (cold)
  • 1/3 cup  Shortening
  • ¾ cup  Water
  • Egg

For The Filling:

  • 2 ½ cups Fresh pineapple
  • ½ teaspoon Nutmeg
  • ½ teaspoon Cinnamon
  • 1 ½ teaspoon Vanilla
  • ¾ cup  Brown sugar

Instructions
 

  • Let's begin by preparing the pineapple. Peel and cut it into chunks.
  • Blend the pineapple until smooth, add water if needed.
  • Measure 2 ½ cups, transfer to a saucepan, add spices and sugar. Simmer.
  • Let the mixture thicken to a jam-like consistency, then cool.
  • For the dough, mix flour, salt, sugar, butter, and shortening.
  • Add cold water, and knead until a slightly sticky, firm dough.
  • Chill the dough in the fridge for 30 minutes.
  • Preheat the oven to 375 F and prepare baking trays.
  • Roll out the dough thinly and cut into circles.
  • Scoop pineapple filling into each circle.
  • Brush the edges with a beaten egg.
  • Fold the dough into a triangle shape, pinch to seal.
  • Brush with egg wash and bake for 15-20 minutes.
  • Cool on a wire rack before serving. Enjoy!

Notes

  1. Use fresh pineapple or good canned pineapple for the jam.
  2. Don't overwork the dough to keep the crust flaky.
  3. Brush the tart with egg wash before baking for a nice golden look.
