Mix Hennessy, buttermilk, garlic, thyme, paprika, salt, and pepper in a bowl.
Put chicken in the mix, and keep in the fridge for 2 hours or more.
In another bowl, mix flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
Let the chicken get to room temperature for 30 minutes.
Heat oil to 350°F, cover chicken in flour mix, then fry.
Fry for 12-15 minutes until it's golden and cooked inside.
Check with a thermometer to make sure it's 165°F inside.
Take out the fried chicken, and get rid of extra oil on paper towels.
Let the Hennessy Fried Chicken rest before you eat to let the flavours settle.
