Take the turkey breast out of the fridge. Let it sit for 30 minutes at room temperature.
Pat it completely dry with paper towels. This helps the skin get crispy later.
Mix softened butter in a bowl. Add chopped herbs, garlic, and lemon zest.
Season with salt and pepper generously. Stir everything together until well combined.
Rub olive oil all over the turkey breast. Gently separate the skin from the meat.
Spread herb butter under the skin carefully. Rub remaining butter on top of the skin.
Preheat your oven to 350°F (175°C). Place turkey in the roasting pan breast-side up.
Roast for about 90 minutes until done. The internal temperature should reach 165°F.
Remove turkey from the oven when done. Cover it loosely with aluminum foil.
Let it rest for 15 minutes before slicing. This keeps all the juices inside.
