- 10 cups Water
- 2 1/2 lbs Pork meat or the hog's head
- 1 Pig's foot
- 2 teaspoon Salt
- 3/4 lb Onions (chopped)
- 1 tablespoon Parsley flakes
- 1 tablespoon Celery flakes
- 1 cup Green onions (chopped)
- 1 teaspoon Black pepper
- 3/4 teaspoon Red pepper
Clean the hog head, and remove eyes, ears, and brains. Cut into 4 pieces.
Put water in a 5-quart pot. Add hog head, pork meat, pig's foot, and salt. Cook until tender.
Add onions, parsley, celery, green onions, salt, pepper, and red pepper. Cook for 3 minutes.
Take the meat out (keep liquid). Remove bones. Chop meat in a food processor.
Mix chopped meat with reserved liquid. Pour into the pan. Chill.
Serve on crackers or with boudin. Makes 60 servings.
