Hogs Head Cheese Recipe

Ingredients
  

  • 10 cups Water
  • 2 1/2 lbs  Pork meat or the hog's head
  • Pig's foot
  • 2 teaspoon Salt
  • 3/4 lb Onions (chopped)
  • 1 tablespoon Parsley flakes
  • 1 tablespoon Celery flakes
  • 1 cup  Green onions (chopped)
  • 1 teaspoon Black pepper
  • 3/4 teaspoon Red pepper

Instructions
 

  • Clean the hog head, and remove eyes, ears, and brains. Cut into 4 pieces.
  • Put water in a 5-quart pot. Add hog head, pork meat, pig's foot, and salt. Cook until tender.
  • Add onions, parsley, celery, green onions, salt, pepper, and red pepper. Cook for 3 minutes.
  • Take the meat out (keep liquid). Remove bones. Chop meat in a food processor.
  • Mix chopped meat with reserved liquid. Pour into the pan. Chill.
  • Serve on crackers or with boudin. Makes 60 servings.

Notes

  • Use fresh ingredients for the best taste.
  • Cook the pig's head well to make sure the meat is soft and cooked through.
  • Try different spices to give it your own special flavor.
