  • 1 can 15 oz whole kernel corn, drained
  • 1 can 15 oz creamed corn
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 2 eggs beaten
  • 1 box 8.5 oz corn muffin mix
  • 2 tablespoons honey for casserole
  • 1 tablespoon sugar optional, for extra sweetness
  • Pinch of salt

Instructions
 

Preheat the oven

  • Set your oven to 350°F (175°C). Let it heat while you prepare the mixture. Grease your baking dish with butter or oil. This will prevent sticking.

Mix the wet ingredients

  • In a large bowl, add sour cream, melted butter, and beaten eggs. Whisk until everything is smooth and well combined.

Add corn and honey

  • Now, add both cans of corn — the whole kernel and the creamed corn. Pour in 2 tablespoons of honey and stir well. The honey gives the dish a lovely golden sweetness.

Add dry ingredients

  • Pour in the corn muffin mix. Sprinkle a pinch of salt and sugar if you like. Mix everything gently. Don’t overmix; just stir until you see no dry spots.

Pour into baking dish

  • Transfer the mixture to your greased baking dish. Spread it evenly with a spatula so it bakes nicely.

Bake the casserole

Glaze the casserole
