- 3 Cups All-purpose Flour
- 2 Cups Granulated Sugar
- 1 Tsp Baking Soda
- 1 Tsp Ground Cinnamon
- 1/2 Tsp Salt
- 1 Cup Vegetable Oil
- 3 Large Eggs
- 2 Tsp Vanilla Extract
- 8 Oz Crushed Pineapple
- 2 Cups Mashed Bananas
- 1 Cup Chopped Pecans
- 16 Oz Cream Cheese
- 1/2 Cup Unsalted Butter
- 4 Cups Powdered Sugar
Preheat your oven to 350 degrees Fahrenheit now. Grease your cake pans with some oil. Dust them lightly with a little flour.
Whisk the flour and sugar in a bowl. Add the cinnamon, soda, and salt too. Mix them until they look very uniform.
Add the eggs and oil to the mix. Pour in the vanilla and the fruit. Stir everything with your large rubber spatula.
Fold in the chopped pecans very gently. Divide the batter into your two pans. Smooth the tops with a small spoon.
Bake the layers for about thirty minutes. A toothpick should come out very clean. Let them cool in the pans first.
Beat the cream cheese and butter together. Add powdered sugar and vanilla for taste. Spread the frosting between the cool layers.
