Ingredients

  • 1 lb GREEN BEANS
  • 1/2 cup SLICED ALMONDS
  • 2 tbsp UNSALTED BUTTER
  • 1 tbsp OLIVE OIL
  • 1/2 LEMON juiced
  • 1 tsp SEA SALT
  • 1/2 tsp BLACK PEPPER

Instructions

Step 1:

  • Fill your large pot with fresh water. Add a big pinch of salt. Place it on the stove now. Turn the heat to high.

Step 2:

  • Wait for the water to boil. You want big bubbles on top. This will cook the beans fast. It keeps them very green.

Step 3:

  • Wash the green beans in cold water. Trim the stem ends off carefully. Leave the curly tips for beauty.

Step 4:

  • Drop the beans into the boiling water. Set a timer for three minutes. Do not leave them too long. They must stay crisp.

Step 5:

  • Prepare your ice bath right now. Put ice cubes in a large bowl. Add cold water to the ice.

Step 6:

  • Drain the beans into your colander. Quickly put them in the ice. This stops the cooking process. It locks in the color.

Step 7:

  • Place the skillet on the stove. Set the heat to medium-low. Add the olive oil and butter. Let the butter melt slowly.

Step 8:

  • Add the sliced almonds to the pan. Stir them with your tongs often. Cook them until they look golden. They will smell very nutty.

Step 9:

  • Take the beans out of the ice. Pat them dry with a towel. They must be very dry now. This prevents splashing in the pan.

Step 10:

  • Add the dry beans to the skillet. Turn the heat up to medium. Toss them with the toasted almonds.

Step 11:

  • Sauté the mix for two minutes. The beans should get warm again. The butter should coat every piece.

Step 12:

  • Squeeze the fresh lemon juice over. Sprinkle the salt and the pepper. Give it one final, big stir. Serve it on a warm plate.

Notes

  • Use French green beans for a thin look.
  • Toasting almonds early makes them taste better.
  • Ice baths keep the beans bright green.
  • Do not overcook the green beans today.
  • Fresh lemon juice is better than bottled.
  • Add a little garlic for savory flavor.
  • Dry the beans well before the pan.
  • Keep heat low so butter stays yellow.
  • Sliced almonds are easier than whole ones.
  • Serve this dish immediately for the crunch.
