Ingredients
  

  • 3 cups cold heavy cream
  • 1 cup mascarpone cheese
  • ½ cup sugar
  • ¼ cup cocoa powder
  • 1 tablespoon instant coffee
  • 2 teaspoons vanilla extract
  • 1 package chocolate chip cookies
  • Chocolate shavings optional

Instructions
 

Make the mocha cream

  • Mix cream, mascarpone, sugar, cocoa, coffee, and vanilla. Beat until thick.

Layer the cookies

  • Place cookies in the bottom of a springform pan. Add a layer of cream on top.

Add more layers

  • Repeat cookie and cream layers. Fill the whole pan.

Smooth the top

  • Use a spatula to make the top flat.

Chill the cake

  • Cover with plastic wrap. Chill for 6 hours or overnight. This makes the cookies soft.

Serve

  • Remove the cake from the pan. Add chocolate shavings. Slice and enjoy.
