  • 1 pound chicken sausage removed from casing
  • 1 cup fresh breadcrumbs
  • 2 eggs
  • ½ cup grated Parmesan
  • 2 tablespoons milk
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 10 cups chicken stock
  • 1 cup dry pasta small shape
  • 3 cups fresh spinach

Instructions
 

Make the Meatballs

  • Mix chicken, sausage, eggs, breadcrumbs, milk, and cheese. Shape into small balls.

Cook the Vegetables

  • Heat oil. Add onion, carrots, and celery. Cook until soft.

Add the Stock

  • Pour chicken stock into the pot. Let it boil slowly.
