- 1/4 pound unsalted butter
- 4 Extra-large eggs
- 1/2 cup Lemon juice
- 1/8 teaspoon kosher salt
Peel 3 lemons with a carrot peeler, avoiding the white pith. Place the zest in a food processor with a steel blade. Add sugar, and pulse until finely minced with zest.
Combine sugar and lemon mixture with butter, and cream together. Add eggs one at a time, then lemon juice and salt. Ensure thorough mixing of all ingredients.
Pour the mixture into a two-quart saucepan. Cook over low heat, stirring constantly until thickened, aiming for around 170°F, just below the simmering point. Afterwards, cool or refrigerate upon removal from heat.
