Pour rum over raisins in a small bowl.
Let them soak for 30 minutes minimum.
This makes them plump and flavorful.
Stir occasionally to ensure even soaking.
Combine rice, milk, sugar, and salt in pot.
Bring to a gentle boil over medium heat.
Reduce heat and simmer for 25 minutes.
Stir frequently to prevent sticking or burning.
Whisk egg yolks in a separate bowl.
Add a little hot rice mixture slowly.
This prevents eggs from scrambling when added.
Whisk constantly while adding the warm mixture.
Pour egg mixture back into the pot slowly.
Stir constantly over low heat for 5 minutes.
Add heavy cream and vanilla extract now.
The pudding will thicken as it cooks.
Drain raisins but save the rum liquid.
Add both to the rice pudding mixture.
Stir well to distribute raisins evenly throughout.
Cook for 2 more minutes on low heat.
Pour into serving bowls while still warm.
Sprinkle cinnamon on top for extra flavor.
You can also refrigerate for cold pudding.
