Ingredients
  

  • 1 Pound Carrots
  • 2 Large Sweet Potatoes
  • 1 Cup Dried Plums
  • 1/2 Cup Orange Juice
  • 1/4 Cup Honey
  • 2 Tablespoons Butter
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Salt
  • 1/4 Cup Water

Instructions
 

  • Wash all your fresh vegetables in the sink. Peel the sweet potatoes with your peeler. Peel the carrots until they are perfectly clean.
  • Cut your sweet potatoes into large, even chunks. Slice your carrots into thick, round coins. Put the cut veggies in a large bowl.
  • Place your large heavy pot on the stove. Turn the burner heat to a medium level. Add the fresh butter into the hot pot.
  • Watch the butter melt and bubble slightly. Add your cut carrots to the melted butter. Add your sweet potatoes to the pot too.
  • Stir the vegetables well with your wooden spoon. Coat the vegetables in the melted butter completely. Let them cook gently for about five minutes.
  • Pour in the fresh orange juice right now. Drizzle the sweet honey evenly over the veggies. Stir the hot pot to mix the liquids.
  • Sprinkle the warm cinnamon spice inside the pot. Add a small pinch of salt in there. Stir everything so it mixes very well.
  • Add the dried sweet plums to the pot. Add a splash of water to the bottom. Turn the stove heat down to very low.
  • Put a tight, heavy lid on the pot. Let the food simmer very, very slowly. Cook it patiently for about two hours.
  • Check the hot vegetables with a sharp fork. They should be very soft and completely tender. Serve the sweet dish while it is hot.

Notes

  • Cut vegetables the same size. This helps them cook evenly.
  • Use fresh orange juice. It gives a much better taste.
  • Do not boil it fast. Just simmer the pot slowly.
  • Stir the pot gently. This stops potatoes from breaking apart.
  • Make this dish ahead. Store overnight for a deeper flavor.
