Ingredients
  

  • 3 ripe bananas mashed
  • 1/3 cup melted butter
  • 3/4 cup brown sugar
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons dark rum
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/3 cup shredded coconut

Instructions
 

  • Heat oven to 350°F (175°C).
  • Grease loaf pan well.
  • Mash bananas in large bowl completely.
  • Add melted butter to mashed bananas.
  • Mix brown sugar into banana mixture.
  • Beat in egg and vanilla extract.
  • Stir in dark rum carefully.
  • Sprinkle baking soda and salt over mixture.
  • Add flour gradually, mixing gently.
  • Fold in all spices evenly.
  • Add coconut flakes last.
  • Pour batter into prepared pan.
  • Bake for 60-65 minutes total.
  • Test with toothpick for doneness.
  • Cool in pan 10 minutes.
  • Remove and cool completely.
