- 2 Shallots (peeled and chopped finely)
- ½ cup Heavy cream
- ¾ cup Beef stock
- 4 tsp Black peppercorns (divided)
- 2 tsp Worcestershire sauce
- ¼ tsp Salt
Crush 3 tsp of peppercorns in a bag.
Melt butter and oil in a pan.
Add shallots, salt, crushed, and whole peppercorns; cook.
Pour stock and Worcestershire sauce; boil, and simmer until reduced.
Stir in cream, simmer, then remove from heat.
